Peach Burrata Salad with Champagne Vinaigrette

This Peach Burrata salad with Champagne Vinaigrette is the best way to make the most of your seasonal fruits this summer. Use up any ripe peaches with this delicious salad recipe! Recipe from Dash of Mandi.

What you’ll need:

Champagne Vinaigrette 

  • 1/4 cup champagne vinegar

  • 1/2 cup olive oil

  • 1/2 tbsp dijon

  • 2 tsp honey

  • 1/2 tsp minced garlic

  • Salt and pepper to taste

Peach Burrata Salad

  • 2 ripe peaches, sliced

  • 1 cup cherry tomatoes, halved

  • 8 oz burrata (Trader Joe’s or Metropolitan Market have great choices!)

  • 2-3 basil leaves, sliced into small ribbons

First, make the champagne vinaigrette by combining all of the ingredients in a jar or small container with a lid. Cover with the lid and give it a good shake. Taste and adjust seasonings if necessary. Cover and refrigerate until ready to use.

  1. In a shallow bowl, add the peaches and cherry tomatoes. Break apart the burrata on top.

  2. Drizzle on your desired amount of champagne vinaigrette (you can save the rest in the refrigerator for later use).

  3. Garnish with fresh basil ribbons.

  4. Serve and enjoy!
